Cocinar Mexicano in Tepoztlán

With daily hands-on classes taught by our team of expert instructors, technique sessions offered by local village women, and guest meals prepared by some of Mexico's most innovative restaurateurs and chefs, our weeklong village retreats teach not just the basics of a remarkable culinary tradition but the thinking that inspires it.

Participants are based in Tepoztlán, an hour's drive from Mexico City, in the foothills of the great volcanaoes. Each village session is built around one of Mexico's world-famous fiestas, such as November's glorious Day of the Dead, or the Posadas that lead up to Christmas, affording participants the chance to plunge into the processions, rituals, music, and of course to experience the delicious moles and other dishes that are the soul of Mexican life. THE IDEAS BEHIND THE TASTES

Mexican cooking is one of the world's first fusion cuisines, a tantalizing blend of indigenous and Spanish elements that come together in dishes renowned for their pungency and flair.

As with any great cuisine, the secret of Mexico's best known dishes lies in the complex interplay of simple ingredients: chiles and corn, fish and fowl, a dazzling array of fruits and vegetables—even the flowers for which Mexico is famous. The best Mexican cooks know and appreciate this basic palette, without which the art of Mexican cooking would not exist.

Cocinar Mexicano has been designed to teach participants how to sense the full flavor of these "colors," so that they will return to their home kitchens with more than a collection of recipes—though they will receive a handsome souvenir book when they leave—ready to improvise and invent their own Mexican dishes for years to come.
